Zwilling knives often lose their factory edge quickly because they are finished with a fine polish that prioritizes sharpness over long-term edge retention, especially with softer steel variants used in some lines.
To restore performance, use a whetstone (around 1000–3000 grit) to re-establish the edge, then refine it with a higher grit or honing rod for daily maintenance.
Avoid relying only on honing steels, since they realign rather than sharpen, and won’t fix a truly dull blade after extended use.
For consistent results, sharpen at roughly a 15–20° angle and repeat every few weeks depending on usage, or use a professional sharpening service if you want a factory-like edge restored.
