I plan to make frozen desserts like ice cream and sorbet using my KitchenAid mixer. What should I take into consideration?

If you have KitchenAid's ice cream maker attachment, your workload may be lighter. This attachment's freezing chamber eliminates the need to pre-freeze a bowl.

Without the attachment, pre-freeze your KitchenAid mixer bowl for 12–24 hours before churning your frozen dessert. This freezes the bowl for churning. The recipe and initial ingredient temperature determine frozen dessert churning time.

Consider adding cornstarch or commercial ice cream stabilizers to your recipes. Ice crystals are prevented and frozen treats are smoother with these additives.
